You can freeze dry almost any food with high water content: fruits, vegetables, raw and cooked meats, dairy, eggs, full meals, candy, and herbs. What you cannot freeze dry is food that is mostly fat, oil, or sugar with little water to sublimate, plus anything you refuse to pre-freeze or pretreat properly.

I've fielded this question from a lot of first-time buyers, and the pattern is always the same. People assume the machine has a yes/no list. It doesn't. Freeze drying works by sublimating ice, so the real question is always how much water a food holds. This guide covers the foods that work, the foods that fail and why, how long each class takes, and the shelf-life caveats the university extension offices actually publish.

The categories USU marks "no" are safety calls, not texture preferences, and cooking is what moves most of them into the yes column. What You Cannot Freeze Dry

Maple syrup, corn syrup, and straight sugar solutions are the extreme end of that, with nothing but sugar and water to work with. USU still clears pasteurized juices, which are also sugary, with the note that high sugar slows drying and the answer is to freeze them in thin layers. Butter

Butter is mostly fat, with its small water fraction locked in an emulsion. USU notes that "fat does not freeze like water," which slows the process and raises the spoilage risk, and separately that high fat content increases the risk of rancidity in storage. Both problems land on butter at once, and the yield is not worth the tray space. If you want shelf-stable butterfat, clarify it to ghee and store it conventionally. Honey

Honey is already shelf-stable at room temperature without any processing, so the machine has no shelf life to add. It is also a concentrated sugar, which by USU's guidance is the category that holds onto water and resists moisture loss. You gain nothing and lose a tray.

Jam and chocolate

Jam is a sugar-heavy gel, so it hits the same wall as syrup: by USU's account the sugar holds onto water and prolongs drying, and the set structure does not survive the attempt. Chocolate combines the two things USU flags, fat and sugar, in one food. Neither is worth a run. Store both conventionally.

One pattern runs through all five: fat, concentrated sugar, or both. Those are the two things USU names as the drags on a cycle, and a food that is mostly one of them has little for the machine to remove. What Freeze Dries Best

Penn State Extension puts the range at approximately 24 to 48 hours. Anyone quoting you a tighter per-food number is estimating.
